I somehow ended up with a lot of bacon in my freezer. Any good recipes?

My husband likes to wrap it around shrimp and cook it on the grill.
I really only use it for one or two appetizers and in my favorite Crockpot beef bourgignon.

Bacon wrapped scallops, fillets, water chestnuts and dates. Or baked beans w/ bacon, as a starter for bean soup, Italian minestrone, sauteed with onions and cabbage as a side dish, etc.

Cook some chichen with bacon on top then melt some cheese………..coated in LOADS of bbq sauce………….Yum!
carbonara..Pasta cheese sauce mushrooms….(and onion..even though no1 else i no puts them in)
Failing that a good old bacon sandwich!
Or with ya salad!

sure! you can make spaghetti carbonara! slice up bacon in pieces then cook them it’s on fat. start cooking your pasta. when the bacon is cooked to your desired doneness, take them out of the pan, then on the pan with oil, drop in your minced garlic, and onions, chopped small. cook until onions are translucent. then add sliced button mushrooms, add in your cooked bacon, season with salt and pepper, then add in cream (well you can use milk but i really suggest cream). let the sauce simmer, then toss in your cooked pasta in the sauce. lastly, turn off the heat and drop in an eggyolk and quickly stir the pasta (don’t worry, the heat from the sauce and the pasta will cook the yolk.
serve with parmesan cheese.
or you can but shrimps, and wrap them in bacon them fry.
try slicing your bacon up in pieces and make a veggie stir-fry!

get any peppers of your choice fill them [i like to fill with cheese] then wrap in bacon and bake!

Heya.
you could try cooking a sausage and then rapping round a bit of bacon (if you get me)
you could also have a bacon and egg samwich.
and you could cook a fry up including bacon.

Spaghetti Alla Carbonara
1/2 lb
(250 g) pancetta or bacon
2 Tbsp
(30 ml) olive oil
1 Tbsp
(15 ml) butter
4 garlic cloves, peeled and lightly crushed
1/4 cup
(60 ml) dry white wine
salt
1 lb
(500 g) package thin spaghetti
3 eggs
1/4 cup
(50 g) freshly grated Peccorino romano cheese
1/2 cup
(100 g) freshly grated Parmesan cheese
freshly ground black pepper

(30 ml) parsley, chopped fine.

Cut the pancetta or bacon into thin strips.

Put the oil, butter and crushed garlic into a saucepan or small saute pan, and turn on the heat to medium high. When the garlic becomes colored a deep gold, remove and discard it.

Put the pancetta or bacon into the pan, and saute until it begins to be crisp at the edges.

Add the wine, and let it boil away for a minute or two; then turn off the heat.

In a large pot, bring 4-5 quarts (4-5 liters) water to a boil. Add 2-3 Tbsp (30-40 ml) salt, and when the water returns to a boil, put in the spaghetti.

Take the bowl from which you’ll be serving the spaghetti later, and into it break the three eggs. Beat them lightly, then mix into them both grated cheeses, a liberal grinding of pepper, and the parsley.

When the spaghetti is tender but firm to the bite, drain it, and put it into the serving bowl with the egg-and-cheese mixture. toss rapidly and thoroughly until it is well coated.

Reheat the pancetta or bacon quickly over high heat, then pour the entire contents of the pan over the spaghetti. Toss again thoroughly, and serve immediately.
penne with tomato, bacon and cheese sauce

Servings: Makes 4 to 6 servings.
ingredients
6 bacon slices, chopped
6 large garlic cloves, finely chopped
1/2 cup dry red wine
1 28-ounce can diced tomatoes in juice
1 tablespoon tomato paste
1 1/2 teaspoons dried oregano
1/4 teaspoon dried crushed red pepper
4 tablespoons chopped fresh Italian parsley
1 pound penne
1/2 to 3/4 cup crumbled blue cheese, feta cheese or coarsely grated Parmesan cheese
preparationSauté bacon in heavy large saucepan over medium heat until crisp. Spoon off all but 4 tablespoons drippings from pan. Add garlic to pan and stir 30 seconds. Add wine and scrape up any browned bits. Add tomatoes with juices, tomato paste, oregano and crushed red pepper. Simmer until sauce thickens slightly, stirring occasionally, about 10 minutes. Mix in 2 tablespoons parsley.
Meanwhile, cook pasta in large pot of boiling salted water until just tender but still firm to bite. Drain, reserving 1/2 cup cooking water.
Return pasta to pot. Add sauce. Toss over medium heat until sauce coats pasta, adding reserved cooking water by tablespoonfuls if mixture is dry. Mix in cheese. Season with salt and pepper. Transfer to bowl. Sprinkle with remaining 2 tablespoons parsley.
Makes 4 to 6 servings.

Baked macaroni: cook bacon in skillet then remove from pan when done. Add 1/2 of a red onion, chopped, to pan and cook in bacon grease. In bowl: mix cooked pasta (any kind is ok….penne is good), bacon (crumbled), cooked red onion, 1/2 Cup feta, 1 Cup mozzerella, 1 egg, a spash of milk and bake at 400 for 45 min. I cover with foil until the last 10 minutes, then add a sprinkle more of cheese on top. Good when reheated also.
Baked beans: 2 cans baked beans poured into shallow casserole dish, lay raw bacon strips on top and bake 400 for about 25 min. This gives the beans really good flavor and texture. Easy.

There are so many… almost everything is better with bacon. Green beans, mashed potatoes, salads etc… My favorite recipe with bacon is simple. Take crispy bacon, and place it between two pieces of toasted bread with mayonnaise, tomato and romaine. Avocado optional.
I’m sure this was obvious to you, but it is honestly my favorite.

make a meat loaf then wrap the entire thing in bacon. my family can’t get enough. you can also throw a couple slices into a pan of green beans to boost the flavor.
