Question by hpotter4ever2000: Do any of you know any fruity recipes?
I love to cook and bake, and I was wondering if they are any recipes out there that require a lot of fruit.

Strawberry Angels

1 angel food cake
6 large strawberries
1 carton whipped topping

Directions: First, cut the cake into serving-size pieces. Slice the strawberries and layer on top of the cake. Then spoon whipped topping on top of the strawberries. Serve and enjoy!

    Apple Crisp Pancake

    Ingredients:
    1 egg, beaten (2)
    3/4 cup milk (1-1/4 cups)
    3/4 cup chunky applesauce (1-1/4 cups)
    1 teaspoon vanilla extract (2 teaspoons)
    2 cups dry pancake mix (3 cups)
    1 cup quick oats (1-1/2 cups)
    1/2 cup brown sugar (3/4 cup)
    1/2 cup dry pancake mix (3/4 cup)
    4 Tablespoons butter (6 Tablespoons)
    Spray a jelly roll pan with cooking spray. In a large bowl, combine the egg, milk, applesauce, vanilla, and pancake mix. Spread the mixture in the prepared pan. In a medium bowl, combine the oats, brown sugar, pancake mix, and butter. Sprinkle the topping over the pancake batter. Bake in a 375-degree oven for 14 to 16 minutes.

    Brandied sauteed apples are nice on top:

    Sauteed Apples – these also are great by themselves as a side for pork chops or loin roast.

    Ingredients:
    4 Granny Smith apples (or however many you want)
    1/2 cup brown sugar
    1/4 cup butter
    1/4 cup brandy (or rum, whatever you like)
    Raisins (optional)
    Pecans (optional)
    Peel, slice, and core apples. (If you do this the night before, pour a little orange juice with a couple of Tablespoons of Fruit Fresh over the apples and drain before you toss with brown sugar.) Toss with brown sugar and saute until tender. Thrown in a few raisins and some pecans if you have them. Simmer for a couple of minutes, then cool slightly.

    Fruity Yogurt:

    1½ hours 20 min prep
    4 servings

    400 g plain yogurt
    1 cup sugar
    1 apple
    1 mango
    1 orange
    1 pear
    1 green apple
    10 grapes
    3 drops vanilla essence
    1 kiwi

    1. Beat the yogurt and sugar in a bowl.
    2. Cover.
    3. Refrigerate for 60 minutes.
    4. Cut all the fruits into small pieces.
    5. Put into a bowl.
    6. Add the essence and mix.
    7. Pour the yogurt on top.
    8. Serve in bowls.

    Ingredients
    1 sheet Refrigerated pie pastry
    1 cup Water
    1 pkg (0.8 oz) sugar-free cook-and-serve vanilla pudding mix
    1 pkg (0.3 oz) sugar-free lemon gelatin
    1 pkg (8 oz) fat-free cream cheese, cubed
    2 tbsp Sugar (equivalent in sugar substitute)
    1/2 cup Reduced-fat whipped topping
    1 1/2 cups Quatered fresh strawberries
    1 1/2 cups Sliced halved peeled kiwifruit
    1 can (8 oz) unsweetened pineapple chunks, drained

    Preparation
    1. On a lightly floured surface, roll out pastry to a 12-in. circle. Transfer to a 14-inch pizza pan; prick with a fork. Bake at 450 for 6-8 minutes or until golden brown. Cool on a wire rack.

    2. In a saucepan, combine the water and pudding mix until smooth. Bring to a boil over medium heat, stirring constantly. Whisk in gelatin; cook and stir 1 minute longer or until thickened. Remove from the heat and let cool.

    3. In a small mixing bowl, beat cream cheese and sugar substitute until smooth; fold in whipped topping. Spread cream cheese mixture over crust to within 1/2 inch of edges. Spread gelatin mixture evenly over cream cheese mixture. Arrange fruit over top. Refrigerate for 1 hour or until chilled. Refrigerate leftovers.

    Cook’s Notes
    Let the kids arrange the fruit on top of the “pizza.” This will get them invloved and encourage them to eat healthy!
