On Jiffy’s website (and Bisquick’s) it said to use their muffin mixes, but I know I’ve made muffins from their baking mix before. Does anyone have the recipe? Thanks!

Bisquick baking mix is virtually the same. You can use their recipes: http://www.bettycrocker.com/recipes/browse/Browse_Recipes_by_Category.aspx
Blueberry Muffins
2 cups Original Bisquick® mix
2/3 cup milk
1/3 cup sugar
2 tablespoons vegetable oil
1 egg
3/4 cup fresh or frozen (thawed and drained) blueberries
1. Heat oven to 400ºF. Place paper baking cup in each of 12 regular-size muffin cups, or grease bottoms only of muffin cups.
2. Stir all ingredients except blueberries just until moistened. Gently stir in blueberries. Divide batter evenly among cups.
3. Bake 13 to 18 minutes or until golden brown.
High Altitude (3500-6500 ft)
Heat oven to 425ºF.
Remove the blueberries for a plain muffin.
Because the mix is so versatile, you can play with it a little. You can use apple juice instead of milk, and the muffins will come out fine. You can also add apple chunks and some cinnamon and sugar for sweet apple muffins.

It is the same recipe that they use to make the coffee cake. Just add whatever fruit or nuts you want and bake them in muffin tins at 400 degrees for about 15-20 miutes.
