I soaked dry garbanzo beans for 2-3 days and they have this odor. I’m just finishing cooking them on the stove for 2 hours. They are going in a pasta dish later which involves more cooking. Are they going to be okay to eat?
Not sprouting. Just a little funky smelling.

Fermenting or sprouting? Sprouting is fine. Well, so is fermenting, if you don’t mind the flavor it gives. Either way they’re safe, if that’s what you’re worried about.

no no no if cooking only soak for 24 hr. at a temp no higher then 72 It is the starch you smell it has permeated in the water
