Question by muffinmix75: What are a few other good cookie recipes for my holiday cookie mix?
I am going to make cookies for my family and friends this holiday, I want to make a nice, well rounded mix. I am looking for 2-3 EASY cookie recipes that will make 1-2 dozen cookies per recipe batch. I already plan on making peanut butter and chocolate chip cookies, and lemon squares. Either post your own recipe or links to another. Thanks :]

Cake mix cookies

One normal sized cake mix, your choice of flavor
2 eggs
1/2 c. oil

Mix all ingredients, roll into balls. Bake at 325-350(depends on your oven, I seem to have an oven with a superhero complex that likes to burn stuff) for 4-10 minutes, until the tops start to look wrinkly, (they look like a puffy gingersnap). Remove from oven and let sit on the pan for another 3-5 minutes until firm enough to move to the cooling rack.

These cookies are easy to make, and very delicious. They are just sweet enough, and not really greasy, though you’d think they would be. I get between 3-5 dozen per cake mix, lol.

Good luck!

  1. Lauren Says:

How about chocolate cheesecake squares? I know they aren’t cookies, per say, but they are small enough that they are still easy to serve along side your other treats. The recipe below is my favorite. I can’t count how many times I’ve made them and I plan on making them again for an up and coming holiday party I am hosting. They always seem to be a real huge hit with everyone!

I was also going to suggest lemon squares – but it seems you’ve already decided on baking those! :)

Hope that helps and happy baking!
