    Ah, go ahead and cook up a large batch of something, and store the extra in the freezer (in freezer bags / container, of course).

    How about some kind of casserole? You can cut it up into serving sizes and freeze what you don’t eat.

    Get a pre-packaged ready to cook pie crust, some left overs (veggies, steak, chicken, etc.) or brown a small portion of ground beef, add your fav seasoning or sauce (katchup works in a pinch). Mix together and put in the pie crust. Fold over the pie crust to make a half-circle “pocket sandwich”! Bake according to pie crust package directions (or just take it out when it gets brown) Uses up leftovers … or you can start with fresh ingredients.

    Check out some of the ready to cook packaged rice or pasta dishes. Add canned tuna or chicken, or leftovers again. You can also add canned tomatoes (with jalapenos is my fav) or any other fav veggie.

    Super easy:

    Use pre-cooked chicken, if you want or some other pre-cooked meat, some sort of cheese (for the glue of the thing), green onions, some pre-cooked veggie, and it’s a whole meal in a pocket. To make it healthier, I use the whole wheat tortillas.

    Here’s how.

    Heat up a pan, DRY.
    Place the tortilla in the dry pan.
    Put all the ingredients inside.
    If you are making a fold over quesadilla, just fill 1/2 of it.
    If you are making a whole one, fill the whole thing (I usually leave an inch room on the edge.).
    When the cheese begins to melt, put on the other 1/2 (or fold it over), and flip (or in the case of the 1/2 one, eat and enjoy!)!
    If you flipped, it won’t take long at all. I usually use a spatula that is wide, I haven’t had a mess-up, yet.

    My favorite? I like to have a mixed mexican cheese with green onions on the whole wheat tortilla. I heat up some nice tomato soup, and it’s the classic grilled cheese/tomato soup combo.

    My favorite thing when cooking for one, was getting a really special piece of produce for desert. I looked around for the most expensive pear or whatever, and I would savor it. It’s like a treasure for yourself.

    Omelets and other breakfast foods are good for anytime for a single serving.

    I agree with freezer cooking, make as much as you want, and then package them up in meal size portions for YOU. This means that the next time you want that thing, you have your own homemade convenience food/TV dinner. Just zap and eat. Use lower power for a longer time.

    Sammies. Don’t forget wraps and pitas, bagels, English muffins for sandwich alternatives.

    You can do a pizza type dish with any of the above, or a hamb bun, or another small hunk of bread.

    Salads are easy to fix for one.

    Foreman grill makes it pretty easy to cook small meals.

    I do this thing with ramen or pasta and black beans that is really good. You cook the noodles and drain, then add flavor packet or boullion or broth, and a can of black beans drained. Toss together, it is really really good. Sort of healthy depending on your noodles choice and amount of salt and fat…ok so the beans are really the only healthy thing in it. But it is filling? The beans hold better with pasta if it is broken up or already small…bowties, rings, rotini, mac, anything you can eat with a spoon.

    Stir fry lends itself to a small meal, it is quick, just make sure you use small amounts of each ingredient so you don’t make too much total food.

    Remember the Golden Rule/karma too. Also good idea if you can’t store huge amounts of food in the freezer. Just because you are a single person household doesn’t mean you can’t feed other people when you cook. Buddy up with a senior in your neighborhood and deliver a plate to them once in a while of whatever you made for dinner. Or have friends over for a casual supper at your house. Doing nice things for others is NEVER really about money and it ALWAYS comes back to you in some positive way…even if you usually have to watch your budget and can’t feed others all the time.
