What kind of range hood for taking desi cooking odor, from the kitchen. and how do i install a canopy, and which way the ventiliation. will i take it out the chimney or the roof.

Range hoods will be rated by CFM (cubic feet per minute) or some other measure that shows how much air the hood can move in a given unit of time. The greater the CFM, the more air it moves, which will make it more effective at removing the odors. However, if the range hood draws too much air, you could cause other problems like backdrafting in the fire place or sucking carbon monoxide from your furnace vent, etc, etc.

For a 30 inch range, you want a fan that will draw 120-150 CFM. That said, you need to also consider the space that you have to install it. The hood should be 27 inches above the range top. If you have to go higher, then you’ll need to up the CFMs a bit.

As for venting out the roof, if you don’t already have a range hood, then venting out the side wall is easiest (especially if you have the range against an outside wall).
